3 Beautiful Plant Based Ideas for Different Ocassions

People always ask me: I want to try to eat “more alkaline” but what the heck do I eat? Well, the good news is that following the alkaline diet is not as hard as many gurus make it to be. First of all, it’s not about perfection, it’s about progress. Also, the alkaline diet is not about eating 100% raw (unless of course you want to). There are many different ways to go about it (for example, some people go fully vegan, some don’t, some go vegeterian and some simply decide to add more plant based foods into their diet and reduce animal products at the same time). It’s up to you what you decide to choose. My goal is to provide you with simple, easy and nutritious recipes that don’t require spending hours in your kitchen. These are also fantastic to detox and help you add more fresh raw or almost raw foods into your diet. Whatever it is that you eat, always try to serve it with a big bowl of salad. You can never go wrong with that! So there we go ladies and gentlemen, some of my latest recipes! Of course, remember that nothing is set in stone. Feel free to use your imagination and transfrom those recipes if you want (especially if a recipe calls for an ingredient you can’t stand or doesn’t work well for you). And yes, as the title of this post says, these recipes are fully plant based, as it is our goal- we want to enrich our diets with beautiful plant based foods and actually enjoy it (doesn’t have to be gross…)

Recipe #1 Barley served with Fresh Papaya Salad with Cashew Nuts, Chili and Lime

Barley is a very nutritious whole grain that has a distinct nutty flavour and is high in B vitamins and colon cleansing fiber. Fresh papaya not only packs a huge vitamin C and anti-oxidant punch, but is also known for its colon cleansing ability, making this combination a great start for detoxing your system. The cashew nuts are high in protein and essential minerals while the chili not only adds a spicy bite, but also brings along its immune-boosting properties. The lime juice adds a little zing as well as an extra vitamin C punch. This light dinner makes a lovely meal not only on a warm summer night but even in the winter.

Serves 4

Preparation time: approximately 1 hour, including cooking time for the barley

Ingredients:

  • 1 Cup (250ml) Raw barley grains
  • 2 Cups (500ml) Boiling water
  • 1 teaspoon (5ml) Organic sea salt
  • 4 Cups (1litre) Fresh papaya, diced
  • 4 teaspoons (20ml) Fresh garlic, finely chopped
  • 4 teaspoons (20ml) Fresh ginger root, finely chopped
  • 4 teaspoons (20ml) Fresh red chili, seeded and finely chopped
  • 4 Tablespoons (60ml) Raw cashew nuts, roughly chopped
  • 4 Tablespoons (60ml) Desiccated coconut
  • 4 Tablespoons (60ml) Fresh coriander leaves, finely chopped

Instructions to cook the barley:

  1. Place the barley in a saucepan with the boiling water and sea salt
  2. Bring to the boil and then reduce to a simmer
  3. Allow to simmer for approximately 50 minutes, until the barley is fluffy and has absorbed all the water
  4. Set aside to cool

Instructions to assemble the salad:

  1. Using four separate serving bowls, place ½ Cup (125ml) of the cooked, cooled barley into each bowl
  2. Top each bowl of barley with 1 Tablespoon (15ml) of the chopped coriander leaves
  3. Top each bowl with 1 Cup (250ml) of the fresh diced papaya
  4. Top each bowl with 1 teaspoon  (5ml) of the fresh chopped ginger
  5. Top each bowl with 1 teaspoon (5ml) of the fresh chopped garlic
  6. Top each bowl with 1 teaspoon (5ml) of the fresh chopped red chili
  7. Toss the ingredients in each bowl together
  8. Sprinkle 1 Tablespoon (15ml) of the cashew nuts over each bowl
  9. Sprinkle 1 Tablespoon (15ml) of the desiccated coconut over each bowl
  10. Serve

Recipe #2 Brown Rice with Spicy Spiralized Butternut and Tofu

Brown rice is another fibre rich wholegrain that is great for cleansing the colon and also packs a healthy dose of B vitamins. Butternut squash is known for its high vitamin A content and is also very high in dietary fibre, making it another great option when colon cleansing is something that you are keeping in mind. The tofu is a wonderful, nutritious protein source in this dish and the chili, coriander and lime add to the overall flavour combination.  This dish requires cooking of only the brown rice and the tofu, all the other ingredients are raw, so it is best served cold and makes a wonderful dinner option on a warm summer evening.

Serves 4

Preparation time: approximately one hour, including cooking time for the rice and tofu.

Ingredients:

  • 1 Cup (250ml) Raw Brown rice
  • 2 Cups (500ml) Boiling water
  • 1 Teaspoon (5ml) Organic Sea salt
  • 4 Cups (1litre) Firm tofu
  • 1 Tablespoon (15ml) Extra virgin coconut oil
  • 4 Cups (1litre) Spiralized raw butternut squash
  • 4 teaspoons (20ml) Fresh garlic, finely chopped
  • 4 teaspoons (20ml) Fresh ginger root, finely chopped
  • 4 teaspoons (20ml) Fresh red chili, finely chopped
  • 2 Cups (500ml) Fresh coriander leaves, finely chopped
  • 4 Tablespoons (60ml) Fresh lime juice
  • 4 Tablespoons (60ml) Raw peanuts, finely chopped

Instructions to cook the brown rice:

  1. Place the raw brown rice in a saucepan with the boiling water and sea salt
  2. Bring to the boil and then reduce to a simmer
  3. Allow to simmer for approximately 50 minutes, until the rice is fluffy and has absorbed all the water
  4. Set aside to cool

Instructions to cook the tofu:

  1. Heat the coconut oil in a wok or frying pan
  2. Cook the tofu in the hot oil until golden brown
  3. Set aside to cool

Instructions to assemble the dish:

  1. Using four separate serving bowls, place ½ Cup (125ml) of the cooked brown rice into each bowl
  2. Top each bowl of rice with 1 Cup (250ml) of the Spiralized butternut squash
  3. Top each bowl with 1 Cup (250ml) of the cooked tofu
  4. Top each bowl with ½ Cup (125ml) of the fresh coriander leaves
  5. Top each bowl with 1 teaspoon (5ml) of the chopped garlic
  6. Top each bowl with 1 teaspoon (5ml) of the chopped ginger
  7. Top each bowl with 1 teaspoon (5ml) of the chopped chili
  8. Pour 1 tablespoon (15ml) of the fresh lime juice over each bowl
  9. Toss the ingredients of each bowl together
  10. Sprinkle 1 tablespoon (15ml) of the raw chopped peanuts over each bowl
  11. Serve

 

Recipe #3 Quinoa with Fresh Kelp, Green Asparagus, Spiralized Beetroot and Avocado

Kelp is an amazing food choice when keeping detox in mind, its high in nutrients and anti-oxidants and because it is easily digested it is a great colon cleanser. The green asparagus is known for its high nutrient and anti-oxidant properties as well as its ability to help cleanse the liver. Beetroot adds a sweetness to the overall flavor of this dish and brings along its free-radical fighting properties, it is also known for its detoxing and cancer fighting abilities. The avocado brings along its high potassium and healthy fat content while giving this dish a creamy texture. The quinoa, with its high protein and dietary fibre content is the only part of this dish that is cooked, so it is another one that is best served cold and makes a great dinner option on a warm summer evening.

Serves 4

Preparation time: approximately 1 hour, including cooking time for the quinoa

Ingredients:

  • 1 Cup (250ml) Raw quinoa
  • 2 Cups (500ml) Boiling water
  • 1 Teaspoon (5ml) Organic sea salt
  • 4 Cups (1litre) Fresh kelp
  • 4 Cups (1litre) Fresh green asparagus spears, roughly chopped
  • 4 Cups (1litre) Raw Spiralized beetroot
  • 1 large ripe avocado
  • 4 teaspoons (20ml) Fresh garlic, finely chopped
  • 4 teaspoons (20ml) Fresh ginger, finely chopped
  • 4 teaspoons (20ml) Fresh red chili, seeded and finely chopped
  • 4 Tablespoons (60ml) Sesame seed oil
  • 4 Tablespoons (60ml) Raw seed mix

Instructions to cook the quinoa

  1. Place the raw quinoa in a saucepan with the boiling water and sea salt
  2. Bring to the boil and reduce to a simmer
  3. Allow the quinoa to simmer for approximately 50 minutes until it is fluffy and has absorbed all the water
  4. Set aside to cool

Instructions to assemble the dish:

  1. Using four separate serving bowls, place ½ Cup (125ml) of the cooked quinoa in each bowl
  2. Top each bowl with 1 cup (250ml) of the fresh kale
  3. Top each bowl with 1 Cup (250ml) of the chopped fresh green asparagus
  4. Top each bowl with 1 Cup (250ml) of the Spiralized raw beetroot
  5. Top each bowl with 1 teaspoon (5ml) of the chopped garlic
  6. Top each bowl with 1 teaspoon (5ml) of the chopped ginger
  7. Top each bowl with 1 teaspoon (5ml) of the chopped chili
  8. Divide the avocado into quarters, peel it and pit it
  9. Slice ¼ of the avocado over the ingredients of each bowl
  10. Pour 1 tablespoon (15ml) of the sesame seed oil over each bowl
  11. Toss the ingredients of each bowl together
  12. Sprinkle 1 tablespoon (15ml) of the raw seed mix over each bowl and serve
